Corned Beef and Cabbage?

Corned Beef and Cabbage?

I tradionally cook corned beef and cabbage and wash it down with beer for Saint Patrick's day. However, I was just informed that corned beef and cabbage isn't Irish fare!

I hate corned beef with a passion,

to me it's the worst K-ration,

on St. Paddy's day,

My theory is that it was the nearest approximation to boiled bacon and cabbage the Irish immigrants to America could easily get. Real home-made corned beef is pretty good IMHO, but the stuff that passes for it in a lot of places can be awful.

No worries mate. Just like pizza isn't really Italian and Chinese food (the stuff we eat in North America) really isn't Chinese food, corned beef and cabbage is really an American (and Canadian) Irish meal. As you probably know corned beef usually comes from a Brisket cut of beef.

We enjoyed a meal last night and will enjoy another serving today. The wife makes a rather large pot full of vegetables (potatoes, carrots, turnip, parsnips, etc) with a healthy dose of beef.

Enjoy the meal mates!

We had ours Saturday and my wife cooks up enough for 8 people. With 2 teenaged boys, it made it through one meal. :shock: :roll:

Last night, I celebrated with New York strip steaks, marinated in Kikko-Man soy sauce and cooked over a mesquite fire..served with a baked potato and a green salad with homemade "ranch" dressing..

I feel sorry for you guys.. :badgrin:

Pecan-crusted Trout with almond sauce, Czechoslovakian Potato Salad, a TALL glass of Oranjeboom, and the sweet knowledge I wasn't eating what most of you were. :lol:
